Jo-Ann's Chicken Caccitore

Prep Time: 10 minutes
Cook Time: 60-75 minutes
6 Tyson breaded Chicken Breast Tenderloins, or 6 chicken breast ( you will have to saute these in oil first)
Olive Oil, for sauteeing
1 Medium Yellow Pepper
1 Medium Orange Pepper
1 Medium Red Pepper
1 Medium Onion
1 small can Mushrooms, or use fresh if you want
1 jar Bertolli Marinara sauce or Newmans Garlic and Basil
Cooked Rice
Preheat oven to 425 degrees Fahrenheit.
In a 13x9 baking dish frozen chicken tenderloins and set aside. Slice peppers and onions into nice size pieces and use about 1/2 to 3/4 of the peppers, depending on how much you like. Put onions and peppers together and saute in olive oil until onions are just transparent, then add mushrooms and saute for a few more minutes. When done, put over top of chicken breasts, add jar of sauce and cover with foil. Bake for about 45 minutes and check it, if not done put back 25minutes until it bubbles and you can take the foil off for the last 15 minutes. 

Pour over cooked rice.

This is a very delicious and easy recipe when you are in a hurry! My neighbor who is Italian gave me the recipe, it's awesome. You can also use regular chicken breasts but you have to cut and saute them first, it's up to you. The frozen chicken tenders are already seasoned and give it such a great flavor that you don't need to add salt and pepper, that's why you don't see it listed on here. Play with the recipe to your taste. Enjoy!
