Jenny’s Chicken Parmesan

Prep Time: 25 min.
Cook Time: 30 min
Boneless Chicken Breasts
Seasoned Bread Crumbs
1 egg, beaten in bowl
Mozzarella cheese, sliced
1 jar of your favorite Spaghetti Sauce
Extra Virgin Olive Oil
Preheat oven to 350 degrees Fahrenheit.
In a large skillet, cover bottom of pan with olive oil. Pound each chicken breast flat. Dip each breast in beaten egg, then coat both sides with bread crumbs. 
Fry in olive oil until golden brown. Place on paper towel to absorb oil then transfer to  baking dish, in a single layer. Top each breast with a slice of mozzarella cheese, 
then pour sauce over all.
Bake for 1/2 hour @ 350 degrees. Serve with your favorite pasta & sauce.
