Corn and Beef Soup

Jai’s Famous Corn and Beef Soup


Prep Time: 20 minutes
Cook Time: 3 hours
Serving Size: 20
2-4  lbs. Beef Chuck Roast, cubed and trimmed
(4) 20 oz. cans of Tomato Sauce
20 oz. can Crushed Tomatoes
2 Onions, chopped
1/4 cup Vegetable Oil
(2) 1 lb. bags frozen cut Whole Kernel Corn
(2) 15.5 oz cans of Cream Style Corn
1 package frozen corn on the cob, defrosted and cut into 1/2 inch thick slice
2 quarts Water 
Salt and Pepper, to taste
Pre-heat oil in stock pot. Add onions and beef. Cook on medium fire for about 15 minutes.  Add crushed tomatoes, with juice.  Cook for another 10 minutes.  Add tomato sauce, cream style corn, whole kernel corn, water, salt, and pepper.  Cook on med/low fire for about 2 hours and 15 minutes.  Add corn cobs and continue cooking for about another 20 minutes.

That's a pretty dark soup. Looks hardy and filling; on my to-do list.
