Cook Time: 1 1/2 hours
8 Center Cut Pork Chops
1 cup Brown Sugar
1/2 cup Vinegar
4 Onions, sliced into rings
1 cup Ketchup
1 cup Water
Salt and Pepper to taste
8 Potatoes, thinly sliced into rings
Preheat oven to 350 degrees Fahrenheit.
In a small saucepan, heat water, brown sugar, ketchup, and vinegar until sugar is dissolved. In a 13x9 inch baking dish place pork chops and season both sides with salt and pepper. Layer onions then potatoes over chops, then pour sauce over layers. Cover, and bake for approx 1.5 hours, or until done. Remove cover 30 minutes prior to end of cooking time.

I have had this before when Marc cooked it, and it was so good, I hounded him for weeks for the recipe! I changed only one or two things: I added about 1/4 teaspoon crushed red pepper, I like my food spicy! I also used a whole 4lb. bag of red potatoes, which made the dish quite filled over the top of a 9x13 dish. Next time I make it (soon) I will use a roasting pan for more cooking surface, I had to cook it almost 3 hours for the potatoes to finish. I made this today, and provided the picture. IT IS SO GOOD and so unbelievably simple!!
